6 medium potatoes peeled and sliced
1 medium white onion coarsely chopped
1-1/2 cups cooked ham cubed
1 cup American cheese shredded
1 can cream of mushroom soup
1/2 cup milk
1/2 teaspoon thyme leaves

Directions to make Crockpot Potatoes Au Gratin with Ham

Step 1:

In crock pot layer 1/2 of the potatoes, onion, ham and cheese then repeat layers. In small bowl combine soup, milk and thyme then pour over top.

Step 2:

Cover and cook on high setting for 3 hours. Reduce to low setting and cook 3 hours more

Ingredients to make Roasted Sweet Potato Sticks

1 medium-large sweet potato
1 T. olive oil
salt
freshly ground pepper

Directions to make Roasted Sweet Potato Sticks

Step 1:

Heat oven to 425°F. Cut the potato in half lengthwise, then cut each half into 7 long, thin wedges. Place them on a rimmed baking sheet and toss them with the oil and salt and pepper to taste, so all sides are coated.

Step 2:

Bake 10 minutes. Flip the potatoes over and bake another until tender, another 8 to 10 minutes. Serve hot.

Ingredients to make Baked Potato Chips

3 1/2 lb Red Boiling Potatoes OR white boiling potaotes, Cut crosswise into 1/8-inch thick slices
6 tb Butter, melted (3/4 stick)
Salt and freshly ground Pepper

Directions to make Baked Potato Chips

Step 1:Position racks in upper and lower third of oven and preheat to 500F. Lightly grease 2 baking sheets.
Step 2:Arrange potato slices in single layer on prepared baking sheets. Brush generously with butter.
Step 3:Bake 7 minutes. Switch pan positions and continue baking until potatoes are crisp and browned around edges, about 7 to 9 minutes.
Step 4:Sprinkle with salt and freshly ground pepper. Serve immediately.

1/2 ts Pepper

Directions to make Easy Scalloped Potatoes

Step 1:Spread half of the sliced potatoes in the bottom of a greased baking dish. In a medium bowl, combine remaining ingredients (except potatoes) and pour half the mixture over the first layer of potatoes.
Step 2:Repeat layers of potatoes and mixture. Cover and bake at 350 degrees for 1 hour. Uncover and bake 30 to 45 minutes longer.

CHEESE SAUCE:
3 Tablespoons butter
2 Tablespoons flour
1 teaspoon salt

Dash cayenne 1 1/2 cups milk
1 1/2 cups grated sharp cheddar cheese

Directions to make Scalloped Potatoes with Cheese Sauce

Step 1:In large saucepan, bring water and salt to a boil. Add potatoes, onion and carrots; cook, covered, for about 5 minutes or until partially tender. Drain
Step 2:Make cheese sauce by melting butter in small saucepan. Stir in flour, salt, pepper and cayenne, stirring constantly, about 1 minute. Remove from heat; stir in milk and blend well. Bring mixture to boil over medium heat, stirring until thick and smooth. Add 1 cup cheese; stir until melted.
Step 3:Layer half of vegetables in greased 2 1/2 quart casserole; top with half of cheese sauce. Top with remaining cheese. Bake, covered with foil, at 375 for 30 minutes. Foil may be removed for last 10 minutes to brown top.

Ingredients to make Potato Rice Bean Burgers

1 c Cooked brown rice
1 1/2 c Cooked beans,pink,kidney,navy,
1/2 c Wheat flour (or white)
1 tb Margarine or butter
1 md Onion,diced
1 Clove garlic,mashed
1 tb Spike or seasoning salt

OPTIONAL
1 c Cooked mashed potatoes
1/2 c Cornmeal
1/2 c Bran
1/2 c Cracked wheat
1 small pepper,diced
1 Grated carrot

Directions to make Potato Rice Bean Burgers

Step 1:Mash beans. Add all ingredients and mix well. (If you use all of the ingredients listed your mix may be a bit dry. You might want to add a 1/4 to 1/2 cup of soy, nut, or rice milk. Of coarse you also could use whole milk. Be sure you don’t thin it too much or it will be mushy. Look for a hamburger like consistency.
Step 2:Heat greased grill or electric frypan on med heat. ***Or, you can grease a 13×9 inch glass baking pan and bake at 350* for 30 Min. Just spread mix in pan and cook uncovered.
Step 3:Spoon about 2 heaping Tablespoons of mix onto grill or frypan for each burger and flatten with greased spatula. Turn several times rather than just once on each side like conventional burgers, they have a better texture that way.

Ingredients to make Herbed Potato Casserole

1 1/2 lb Potatoes,peeled and sliced
1 1/2 lb Zucchini,scraped and sliced
3/4 lb Okra,trimmed
Vinegar
1 1 lb eggplant,sliced*
1 lb Fresh/canned tomatoes,sliced
1 bn Fresh parsley,chopped
1 bn Fresh dill,chopped
Salt & freshly ground pepper
1/2 c Olive oil
5 Scallions,chopped
3 Garlic cloves,minced
Toast or bread crumbs

*Soak okra in vinegar to remove slime, then rinse well. Eggplant may be salted and rinsed before slicing if desired.

Directions to make Vegetable Herb Casserole

Step 1:In a large bowl, place all the vegetables, reserving half the tomatoes. Season with the parsley, dill, salt, and pepper, and mix thoroughly. Layer the vegetables in a large casserole, alternating vegetables as much as possible.
Step 2:Meanwhile, heat the oil in a small pan and saute the scallions and garlic, stirring. Chop the remaining tomatoes and add them to the scallions, stirring. Simmer for 10 minutes, then spoon over the vegetables.
Step 3:. Dust the top with the crumbs and bake in a 350 degree oven for 1 hour. Serve warm or cold.

Ingredients to make Garden Baked Potatoes

2 Baking potatoes
1/2 lb Fresh mushrooms,sliced
1 Sweet red pepper,diced
1 Clove garlic,minced
2 tb Olive oil
2 tb Water
1 1/2 ts Lemon juice
1 1/2 ts Salt
1/8 ts Pepper
2 tb Butter,divided
Salt & pepper to taste
Fresh parsley

Directions to make Garden Baked Potatoes

Step 1:Scrub potatoes; rub skins with oil. Place on baking sheet; bake at 400 for 1 hour or until done.
Step 2:Five minutes before potatoes are ready to come out, sSaute mushrooms, red pepper, and garlic in olive oil until crisp-tender; add water and lemon juice. Cover, reduce heat, and simmer 3 minutes; add 1/8 teaspoon salt and 1/8 ts pepper.
Step 3:Split and fluff potatoes; add 1 tb butter to each potato, and sprinkle with salt and pepper. Top with hot mushroom mixture. Sprinkle with parsley.
