potato1 Southwest Bacon Potato Salad – This south of the border, simple recipe for bacon potato salad has a taste of cajun to it. The potatoes are chopped not mashed, mixed with the crispy bacon, and a homemade dressing. Left to sit, once combined to allow the potatoes to absorb the dressing and spice, this Southwest potato salad recipe is awesome.

Ingredients to make Southwest Bacon Potato Salad

2 pounds red potatoes, peeled and quartered
2 medium tomatoes, seeded and diced
1 tablespoon green onion, finely chopped
Salt and pepper to taste
2 tablespoons white wine vinegar
1-1/2 tablespoons Creole style mustard
1/4 to 1/2 teaspoon cayenne pepper
1/4 cup olive oil
2 tablespoons finely snipped parsley
4 bacon slices, cooked crisp

Directions to make Southwest Bacon Potato Salad

Step 1:

In a medium saucepan, cook potatoes in salted water until tender, about 15 to 20 minutes. Remove from pan and dice.

Step 2:

Place in a medium bowl and add tomatoes green onions, and salt and pepper to taste. Toss gently. Set aside.

Step 3:

a small mixing bowl combine vinegar, mustard and cayenne pepper. Add oil in a thin stream, heating constantly. Stir in parsley.

Step 4:

Add dressing and bacon to potatoes and toss gently. Allow potatoes to absorb dressing at least 15 minutes before serving.

  • Slice a combination of red bliss and baking potatoes into both thin and thicker pieces. Feel free to leave the skins on the potatoes – it will give them more flavor.
  • Wrap potatoes in aluminum foil with 2-3 ice cubes or 2 pats of butter (plus seasonings to taste)
  • Place on grill for 3-5 minutes and then flip. Cook the other side for another 3-5 minutes.
  • Check to see if your potatoes have reached your desired firmness ( for crispy potatoes, let them cook longer)
  • Remove from heat and serve

Ingredients to make Grilled Sweet French Fries

2 (8-ounce) garnet yams or sweet potatoes, halved lengthwise, cut into 3/4-inch-wide wedges
2 tablespoon(s) ghee or unslated butter, melted
1 teaspoon(s) garam masala
1/4 teaspoon(s) coarse sea salt
1/4 teaspoon(s) freshly ground black pepper
Olive oil for brushing

Directions to make Grilled Sweet French Fries

Step 1:Place yam wedges skin side down on a large microwave-safe plate; cover with vented plastic wrap. Microwave on high 3 1/2 to 4 minutes, or until almost tender; let cool.
Step 2:Heat an outdoor gas grill, or prepare coals for a charcoal grill for direct grilling over medium-high heat
Step 3:Mix ghee, garam masala, salt, and pepper in a large bowl; add yam wedges and gently toss to coat. Grill yams (keeping the grill lid closed as much as possible) turning yam wedges as they brown, 6-8 minutes.
